This famous hand-rolled White Tea from the Fujian province has been produced this way for over 100 years. We are delighted to welcome this speciality back as it has been a long time since we last had some. The damp leaves are put stored overnight in layers with freshly picked Jasmine flowers laid between the layers. These are removed the following day. The still slightly damp 'two leaves and a bud' are carefully rolled into these exquisite silvery pearls. Watch them carefully unfurl, like newly hatched dragons, once placed in hot water gently releasing a wonderful bouquet and a light, mild, refreshing sweetish flavour. As with all green and white teas, hot never boiling water and re-infuse 3 or 4 times. I would use 6 - 8 pearls per individual serving, they would look lovely in a glass teapot or glass cup, helping you to see the unfurling of the leaves, a contemplative moment of Zen. Whilst not cheap, an experience this fine should have some worth.
