Indian teas especially the strong black Assam teas, are grown to satisfy the western taste. They have a full-bodied flavour and rich, deeply coloured liquor, perfect for adding milk too.
Darjeeling teas are more distinguished being lighter of taste and less inclined to take milk. The leaves are from the Camellia sinensis 'Sinensis' strain rather than 'Assamica'.
There are some wonderful teas from Sikkim and Nepal and northern India, that are definitely worth hunting down and trying.
Indian teas use a grading system that usually labels the tea with capital letters, they mean; Special, Finest, Tippy, Golden, Flowery, Orange, Pekoe.
