Rooibos, Redbush or Massai Tea is prepared in a similar way as one would a traditional tea, just for a little longer, (although it can be ‘stewed’ for hours making a syrup to which hot water is then added.) Rooibos is high in antioxidants, well known for reducing the effects of ageing.
It is caffeine free and low in tannin giving it a mild taste.
This is a stunning smelling tisane, more bitter orange than sweet and would be wonderful with a slice of kumquat added for extra panache. To the top-quality Rooibos are added; raisins, dried apple pieces, lemon peel, cloves, almonds, cardamom, thistle flowers and cornflowers. To prepare this tisane use boiling water and infuse for between four and eight minutes depending on personal taste. It tastes lovely.
