Las Cruces is one of the oldest processing mills in El Salvador. JASAL is a family run business with over a hundred years of experience. The original mill is still functioning, alongside more modern facilities and researchers say that Che Guevara hid in this mill during his journey through Latin America. This coffee is from the Finca Los Nogales in the Apaneca-Ilamatepec region, and is found at an altitude of 1550 metres, and is famous for its fantastic soils and micro-climates. Jasal has overseen a collaborative project with local farmers where each have picked the varietal and process, JASAL have printed the roasters’ logos on the bags and arraigned for all the shipping and distribution. The farmers have chosen; yellow honey, red honey, black honey, natural, washed, soaked and double soaked with varieties; Bourbon, Sarchimor, Caturra, Red Catuai and Yellow Catuai. We have medium dark roasted this delightful coffee.
