The highest grade of Pai Mu Tan from Fuding, a city in Fujian, famous for its White Teas, is this Special Grade, commercially referred to as 6900. Other grades available are High Grade technically known as 6901 and is from the Second Flush and 6902, called Café Grade, from the main plucking. The 6900 would correspond to the Indian style classification as ‘Orange Pekoe 1st Flush’. All the grades are wonderful each showing its own nuances of flavour. White teas are drunk not only for their delightful flavour but also the large variety of health-giving properties they impart. White teas are sundried and withered with no steaming as is typical for green teas. This Special Grade has defiantly more silvery leaves as one would expect from bud and first two leaves plucked as they open after the winter dormancy. I really enjoy this grade and love to treat myself every now and again.

I brewed this tea at 80oC for three minutes and it produced a lovely bright refreshing cup. I will not go into the incredible health giving properties that this famous White Tea provides as you already know this or can easily Google it.
