This famous Japanese tea powder comes from the Kagoshima Prefecture on Kyushu Island, an area of renowned for their organic tea cultivation. Matcha is essentially processed green tea leaves that have been stone-ground into a delicate powder. As the process is quite laborious the tea is generally pricier than other teas. This tea would make a lovely Matcha Latte. Add a teaspoon of the Matcha with an optional two teaspoons of sugar into mug or glass. Add warm water and whisk into a paste, to prevent lumps, then add hot milk and whisk until smooth and a light green colour. These Tencha Matcha leaves are from plants cultivated in the same way as Gyokuro tea plants are grown. This is growing the plants under heavy shade, 20-30 days, prior to plucking. This extra chlorophyll makes for a brighter sweeter green tea.
