Miralvalle is part of the Urrutia’s Estate Coffee Group which runs many estates and farms, including one of our favourites, El Ingenio. The San Ernesto Estate is 140 hectares and has been awarded the Denomination of Origin by the Salvadoran Coffee Council. All the Urrutia’s Estates are Rainforest Alliance Certified and produce 100% shade grown coffee. The company is now in their sixth generation having first started in 1875. The coffee is hand-picked and then wet milled. Once de-pulped the coffee sits in fermentation tanks for up to 12 hours. It’s then washed and dried on clay patios for 10 days. In the first 3 days it’s raked every 15 minutes and then from the 4th day every hour. The coffee then sits resting for 40 days. I really enjoyed this coffee, it isn’t as acidic as one normally comes to expect from a Central American coffee, possibly because it arises from a Bourbon and Pacas blend. It scores 82.5 with SCA and is described as having Caramel, Dark Chocolate, Maple Syrup and Toffee in its flavour profile.
