Dong Ding (凍頂), also spelled Tung Ting, is an oolong tea from the eponymous mountain in Taiwan. It is said the original tea plants were brought from China’s Wuyi Mountains in Fujian Province and planted on Dong Ding mountainside.

Dong Ding is in the Lugu region of Nantou County in central Taiwan. This area has long been used for tea cultivation. Dong Ding is typically medium oxidized about 30% making it quite like a slightly fermented green tea. Dong Ding is still hand harvested and prepared by hand rolling.

Oolong tea is best savoured on its own with little or no embellishment, possibly a small slice of sweet orange.

The aroma of the dried leaves is remarkably fresh smelling and reminds me of something pleasant from my childhood, unfortunately, I can’t recall what, but it is a comforting smell.
