This remarkable coffee comes from the West Valley area of Costa Rica. An area famed for its complex microclimates which contribute to the high percentage of Cup of Excellence winners. The family run Volcán Azul farm produces micro-batches of cultivars, such as Caturra, Geisha, Villasarchi, Sarchimor and Venezia. The red or yellow cherries are hand-picked, once they are felt to be perfectly ripe and then either washed, left unwashed (natural) or honey processed (semi-washed) or red honey where the coffee beans are dried in the sun still encased in their fruit pulp. The Volcan Azul plantation this coffee comes from, is between 1500 and 1700 metres above sea level and produces a selected range of speciality beans.
