Daterra Coffee are the world’s first Grade A Rainforest Alliance Certified farm. Over 60% of the land they own is given over to nature reserves providing homes for Toucans and Burrowing Owls, Squirrel Monkeys and Maned Wolves as well as a stunning collection of other flora and fauna. The Daterra farm is made up of many lots, each with a designated agronomist responsible for maintaining the soil and trees, deciding which varietal best suits that lot. Picking is mechanised and then sorting is carried out at a specially adapted wet mill. First with density sorting removing the overripe cherries, then the remainder sorted to remove the under-ripe and green cherries. Tree dried naturals are also included, and this help give the specific flavour. This Daterra Santa Grutta which translates as Saint Grotto is an unwashed natural with a caramelised sugar flavour combined with ripe fruits taste with a delicate acidity. We have obviously combined the names to make a seasonal Christmas coffee, hope you enjoy.
