This yellow cherry coffee comes from the south-eastern area of Minas Gerais, near the city of Carmo de Paranaiba. The plantation, part of the Brazil Speciality Coffee Association, is found over 1,100 metres above sea level and these conditions suit this Catuai variety of coffee bush. After an initial hand sorting, the yellow cherries are further sorted in a water tank, before part of the pulp is removed, they are then sundried. The two day drying process allows the beans to collect the honey sweetness from the remaining pulp giving the finally roasted beans their exquisite sweet flavour. This coffee is well balance and has a nutty aroma. The taste is reminiscent of caramel and chocolate and produces a pleasant long lasting aftertaste. It has been rated highly on the Cup of Excellence level by the Alliance for Coffee Excellence ACE. It is not an especially expensive coffee but is most definitely of a high quality.
